Grilled Vegetable Salad

Ingredients Add to grocery list

2 to 3 tablespoons olive oil, plus more for greasing
8 ounces baby bella mushrooms, stems trimmed and caps halved
1 red onion, cut into 1/4-inch-thick rings
1 red bell pepper, cut into 1/4-inch-wide strips
1 zucchini, cut crosswise into 1/4-inch-thick slices
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
5 cloves garlic, finely chopped





Grease the grill pan by brushing it with some oil. Preheat to medium-high heat.

Combine the mushrooms, onions, bell peppers and zucchini in a shallow dish. Whisk together the vinegar, salt, black pepper, oregano and garlic in a large bowl. Whisk in the 2 to 3 tablespoons oil to make the marinade. Add the vegetables to the marinade and let stand while the grill pan heats up.

Place the vegetables on the grill. Turn the vegetables once until they are all slightly charred and cooked through, about 20 minutes. Place the vegetables back into a large bowl with any leftover marinade. Toss and serve.

Hang in there Paula. The media has thrown you under the bus, as it has so many others. It has been very difficult to watch. I personally went down and purchased some of your cookware the day I heard so many of your corporate affiliates were ending their business associations . And just this evening I seasoned my turkey burger with YOU! From seasoning I purchased in the gift shop at Lady and Son's on a trip to Savannah with my family. How much fun that day was for us! I thought about how sad I am to see someone I have admired, be put through so much injustice. For being honest! It is incredible to me, how the media has the ability to publicly crucify people of their choice, make decisions to their guilt, and destroy what they have honestly worked so very hard for. In a matter of days, they have the ability to destroy years and years of hard work. Please do not lose confidence that there are so many of us who have your back Paula. None of us can throw that stone. No one deserves what I have seen you have to face publicly. We are here. We are the ones that count! That looks yummy. We have two varieties of corn, spring sugar peas, watermelon radish, spinach, three varieties of tomato, butternut squash, yellow crook neck squash, blue lake green beans, butter lettuce, green onion, parsnip, romaine lettuce, pablano pepper and jalapeno pepper.

I see that I have missed your June 28, St. Lucia Remembered recipes, and I believe that is where we ate with friends a few years ago and were introduced to "flying fish".
