3/4 cup vegetable shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cup sifted all-purpose flour
2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
Additional sugar for rolling cookies
Preheat the oven to 350 degrees.
Line the cookie sheets with parchment paper or nonstick baking mats. Using electric mixers, at low speed, cream the shortening and sugar until thoroughly combined. Add the egg and molasses and beat until completely incorporated. Sift together the flour, baking soda, cinnamon ginger, cloves and salt and add to the mixture. Stir until combined. Roll the dough into balls about 1 inch in diameter. Roll the balls in sugar. Place 1/2 inch apart on the prepared cookie sheets. Flatten the balls slightly with fingertips. Bake for 12 minutes. Cool on wire racks.

Paula, I attempted to make your lemon drop mini cupcakes, and failed. Can you please tell me what I did wrong? They came out hallow in the middle. The only thing I can think of is that I didn't mix the batter well enough.Could that be what went wrong?

This is my son's favorite cookie--he shares them with everyone he knows when I make them. However, if the oven isn't quite hot enough, you will get a very puffy cookie--this is how he likes them best!

I have numerous recipes from great aunts and grandmothers for delicious chocolate chip, and peanut butter and etc etc cookies. I have never been able to find a good recipe for ginger cookies which are my favorites. This is by far the tastiest and easiest to make. Paula Deen, you rock.

Try substituting molasses with sorgum, which you can find in many specialty stores and Amish restaurants and gift stores. Many people argue that molasses and sorgum are the same thing, but I think there is a BIG difference. To each his own taste bud!
