1 sleeve saltine crackers
1 large tomato, finely chopped
3 green onions, finely chopped
1 1/2 cup mayonnaise
1 hard boiled egg, finely chopped
In a medium size bowl, crush the crackers, add all of the ingredients, mix well, and serve immediately.

In a Good Housekeeping interview with Miss Paula, she made mention of the above Cracker Salad recipe; but she indicated she liked to do it in layers and use cream cheese and a bit of cranberry on top. I would like to prepare the one she talked about in the interview but can not find it any where. Can you guys help me out? Thanks and Thanksgiving, Tina

Other than it being a little too salty for me, it was good. I will try it again, but use unsalted tops saltines instead.

Had this delicious salad first at The Lady & Sons when they were at their old location. It was a hit then and still is. I make this in triple batches for picnics and anyone that have not tasted it before, raves about it. I agree, I prepare all the wet ingredients first and egg, and right before serving add the crackers. One picnic, I had tripled the recipe and it was gone in a flash, and because it is super simple, I whipped up another batch. This is a real winner!

About 76 years agao my mother went to a "cooking show" at the local theatre and came home with this recipe, I loved it, but had forgotten about it, so recently made it just for me. Still love it. Actually, I am planning to make it this weekend for a cousin my age, he'll be surprised. Thank you for the recipes you have kept alive and we still enjoy.

Mrs Paula I love your shows.Watch you every day. Ok I have a 7 year old Boy that lives next door from me that can not eat any flour or wheat. So had one of your Recipes for cookies(Magical Peanut Butter Cookies)with out flour and I made them for him but he would not eat any until I give him the Recipe saying it didn"t have any flour. He eat one and Love them..We need Recipes that does not have flour in them because he can not eat any cookies or cakes or bread.He get sick and has to got to the Hospital.So if you can find some more sweet Recipes for the kids that can not have flour..Thank you Bonnie Eddlemon from Rusk, Texas

This salad is GREAT! I add a bit of Cavenders Greek seeasoning, no salt or MSG. I add that to all my salads. I use the Zesta Wheat saltines. Great flavor. I also add the crackers when I'm ready to eat it. If I don't think we'll eat it all in one sitting, pretty unlikely, I save it without crackers added and add when ready to eat again. If you don't have homegrown tomatoes add a pinch of sugar and a tsp. of fresh squeezed lemon juice. MMMMMM!!!!!

My husband hates tomatoes, so along with everything else I added a cucumber & used wheat saltines. He said it gets 4 1/2 stars & he wants to have it again...soon. Thank You Paula

Probably what I would do is mix everything except the crackers just before guest arrive. Have the crackers on a separate plate, let each guest pile as much or little as they wanted. I must try this for myself, sounds so good I am really surprised my grandmother had not heard of it. I so love her cooking when I was a little girl many years ago.

I have eaten this salad for 20 years. It is easy to prepare for a quick luch at work and a wonderful summer side dish,when fresh tomatoes are so plentiful. I have even added purple onions for a little extra flavor. You can't go wrong with this one. Becky A, Pineville, LA

This was the first recipe our oldest son, now 15, learned to make. He prepared it one night to go along with fish we were cooking. Seven years later, he still talks about that delicious Georgia Cracker Salad.

I love this salad. My husband and I take to BBQ's, fish fries and really anything we do we take it. it is actually great for a picnic just mix it there before you eat and it is great.
