For the cake:
3 cups cake flour (not self-rising)
1 teaspoon salt
1 ½ teaspoons baking soda
4 cups sugar
1 cup sour cream, at room temperature
4 large eggs, at room temperature
1 cup oil
9 ounces unsweetened chocolate
1 tablespoon vanilla extract
2 cups strong, fresh brewed coffee
For the frosting:
3 sticks unsalted Butter at room temperature
2 tablespoons milk
1 teaspoons vanilla
9 ounces melted semi sweet chocolate
2 1/2 to 3 cups sifted confectioners sugar
For the cake:
Preheat oven to 325 degrees. Grease bottom and sides of three 9” cake pans.
In a large mixing bowl combine flour, sugar, baking soda and salt.
In a medium bowl place chocolate and pour hot coffee and vanilla.
Let stand about 2 minutes to melt the chocolate then stir until smooth.
ln another bowl whisk together eggs and oil until well blended and light in color. Whisk in sour cream, then melted chocolate mixture.
Add chocolate sour cream mixture to dry ingredients and mix on low speed while gradually adding in thirds. Mix until just until incorporated scraping down the sides of the bowl as needed. Fill prepared pans two thirds full. Bake cakes 40-55 minutes until a toothpick inserted comes out clean. Let cool then decorate as desired.
For the frosting:
Mix butter and milk until smooth and creamy.
Add vanilla just until incorporated.
Add melted chocolate until completely mixed.
Gradually add sugar until you reach the consistency of frosting.

This is the best chocolate cake ever! I have a question, though. I have made this cake twice now and both times I had great difficulty getting the cakes out of the pans. The first time I greased sides and bottoms of pans as per recipe. The second time I greased and floured the pans; this worked a little better than simply greasing. Any suggestions?

This was a very good cake. I only added 1tsp of butter flavor. I didnt have any problems with it not coming out the pans. I used a non stick pan and also greased with shortening and flour and it came out perfectly. I didnt make the frosting above. For the frosting I used 2 sticks unsalted butter and 1 stick salted butter. Then added about 2 tablespoons of cream cheese 1 1/2 vanilla 8 oz of semi sweet chocolate. ( I warmed about 1/4 cup milk and 2 tablespoons margarine then poured over the chocolate to melt). I then mixed the choclate in with the frosting and it was delicious.

This cake totally fell apart after not wanting to come out of the pans. I made it into a trifle with the icing and whipped cream. It's very good1 (Just ugly)

Baked this cake, but had to toss it out. Followed the recipe exactly, but all three layers stuck to the pans, even though they were greased thoroughly. The cake had a pretty good flavor to it, but just fell apart!

I have read some of the comments and you mentioned about the frosting, what I would do add some cool-whip to the frosting, I do this alot with alot of my frostings then it isn`t going to be to rich. You could also do this with peanut butter frosting. I love to experiment when it comes to desserts. I hope this helps some people out there ![]()

The cake was very good, but we weren't fond of the icing. It was too rich. You could really taste the butter. Next time I will try a different frosting.

The cake was heavenly. I baked this cake for my daughter-in-law's birthday. The entire family loved it. The cake was very rich and tasted like a brownie. The frosting was very very rich , I think next time I will use a peanut butter frosting. I only had one issue I placed the batter in 3 nine inch pan but the batter ran over. I think next time I would use 4 pans to prevent this from occuring. Thanks for a great chocolate cake recipe.

Made this for my husband's birthday, the cake was amazing. Tasted like a brownie cake, very moist and not too rich. The icing, however, not my favorite; I will use another next time.
