Directions

Preheat the oven to 450 degrees F.

In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt. Cut in the shortening with a fork until it looks like cornmeal. Add the buttermilk, a little at a time, stirring constantly until well mixed.

Turn the dough out onto a lightly floured surface. Knead lightly 2 or 3 times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut dough into circles with a 2-inch cutter.

Place the biscuits in a greased iron skillet. Gently press down the top of the biscuits. Brush the biscuits with half the melted butter and bake for 14 minutes or until golden brown. Brush the hot biscuits with the remaining butter. Split the biscuits in half and ladle Chocolate Gravy over the hot biscuits.

Chocolate Gravy:

Heat butter in a cast iron skillet over low heat. Mix in sugar, flour and cocoa. Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch. Serve hot over biscuits.

We would visit my grandmother ( Big Mama ) in Texas every summer when I was young. She would make this for me and I would finish off all the biscuits when she did. I can remember her standing at the stove, just her and I in the kitchen. So Good!!!

I'm so glad to find this recipe for Chocolate Gravy. When we were little it was a treat for us to get this on Friday mornings. Our mother worked Monday thru Thursday. Raising six kids was hard for her. But her cooking this for us on Fridays was a treat. Now I pass it on to my girls is a gift.

Years ago around 1955 I was dating a girl from Tennessee and she kept telling me about the great chocolate gravy that her grandmother use to make. So when I finally got to go to Tennessee and meet her granny, we were invited over for Sunday dinner. At that time it was a big deal whenever company from the north came to visit. The whole family and relatives were invited over for dinner. Directly in front was this very large tureen of chocolate gravy. After filling my plate with the roast beef and various vegetables, I reached over and ladled the chocolate all over my plate. Everyone around the table started to laugh. When I asked what was so funny as she made the chocolate just for me, they all chimed in. And said, "Yes, but you don't put it on your meat and potatoes". I had told that story to many people over the years and not one of them ever heard of chocolate gravy. Needles to say I was ecstatic when I saw your recipe for chocolate gravy and biscuits. I am going to have it for breakfast.

My mother always made chocolate gravy and I just thought everyone knew about how to make it. I soon found out after moving out west that hardly anyone knew what it was. I guess it's a southern thing but I grew up eating it. I made it for my family and had to make it for the guys that I worked with and they simply loved it. It was always requested when we had breakfast on the graveyard shift. My sons now make it for their family, my sister made it for her family so it's a tradition in our family. There's nothing like it on a cold morning.

So I just tried making this because my mamaw is the only person I know that can make this stuff right and it's so good. The recipe is dead on and accurate. However, it was a bit too sweet for my taste so next time I make it, I will be using a little less sugar. Delicious!!!

I have been eating this chocolate gravy since I was a little girl. I now make it in the microwave. Just heat the milk 2 minutes, mix the cocoa, sugar and flour, pour into milk and whisk to remove lumps. Then heat 1 minute and stir. Continue heating 1 minute at a time and stirring until desired thickness.
