Bring this Old Fashioned Butterscotch Cookie to a cookie swap!

Servings: 8 dozen cookies
Cook Time: 6 minutes
Difficulty: Easy

Ingredients Add to grocery list

1 cup butter, room temperature
2 eggs
2 cups brown sugar
1 teaspoon vanilla
1 cup chopped nuts
3 cups sifted flour
1 teaspoon baking soda
¼ teaspoon salt

In a medium mixing bowl, sift together flour, baking soda and salt.  Set aside.

In a large mixing bowl using a hand mixer, cream together butter, brown sugar and vanilla. Add eggs one at a time.  Add flour mixture one cup at a time and mix well.  Stir in chopped nuts.

Place dough on wax paper and form into 2-inch rolls.  Refrigerate overnight.

Preheat oven to 375º F. Slice into 1/8 inch slices and bake on an ungreased baking sheet for 5 to 6 minutes.

Allow to cool slightly before removing from baking sheet.

Notes from the Paula Deen Test Kitchen: Makes a great cookie to be served with tea or coffee.  Dough freezes well.  Dough is easier to cut when frozen.  If using this method, allow cookies to sit 3-4 minutes on a cool baking sheet before baking.

I agree with the most recent comments. Butter and brown sugar make the butterscotch. I am using these as a sub for the old Pillsbury roll out cookies. Thank you.

Why would you ruin these old fashioned butterscotch cookies with those horrible artificial butterscotch chips? My blessed grandmother made these back in the 1940's and they were my favorite. You have the right idea Paula.....natural is much better!

The "Butterscotch " is from the BROWN Sugar and butter.....

I can't believe people thought Paul could forget ANY ingredient! No butterscotch chips? Oh, well, I just thought the brown sugar and butter would take care of that! Keep on cookin', Paula, and we will keep on watching!

I made these to give with other baked goodies to my clients and customers. They taste great and look fabulous!

I love that the butterscotch flavor comes from the butter and brown sugar instead of those disgusting chips so many other recipes use. I wonder what the best nuts would be? I used walnuts because I had several pounds on hand but I think pecans might have been better.

lol, re no "butterscotch" in this recipe; reminds me of when I took my 9 year old to see "The Blind Side" half way thru he leaned over and asked when the guy was going to go blind!!

Butterscotch is made of brown sugar and butter, which are the primary ingredients of these cookies. After the ingredients are mixed, the dough tastes just like butterscotch!

This recipe was submitted by a fan and is correct as it was submitted, without butterscotch morsels.

I want to know where the butterscotch flavor would come from, since you have no butterscotch morsels in it. Thanks

I expected them to have butterscotch chips but don't see that in the recipe. Also I have trouble getting sliced cookies to be round instead of oval. I wrap them in a towel to try to keep the round shape. Suggestions?

Maybe a stupid question but if these are Old Fashioned Butterscotch Cookies where's the butterscotch?

Lady Paula I enjoy your shows and the recipes /ideas you share with your viewers.I have a dream of preparing a mouth watering entree with you one day. My largest dream is to cook with you on the White House lawn- your invitation from the First Lady prior to her title. You prepared the most mouth watering shrimp and fries for her when she visited you on Paula's Party, I sure do miss that segment." Thank You" for mentoring me and expanding my passion for cooking and baking. May God continue to bless you and your family. P.S. Jack is a sweet heart. Paula I think you forgot to add the butterscotch morsels to the ingredients. Which brand is your favorite? David Lee
