Apple Raisin Muffins Apple Raisin Muffins

Servings: about 5 dozen miniature muffins
Cook Time: 20 min
Difficulty: Easy

Ingredients Add to grocery list

1 cup water
2 cups sugar
2 cups grated apples
2 cups raisins
1 cup (2 sticks) butter
2 teaspoons ground cinnamon
2 teaspoons freshly grated nutmeg
1/2 teaspoon ground cloves
1 cup chopped walnuts
2 teaspoons baking soda
31/2 cups all-purpose flour





Preheat the oven to 350 degrees F.

Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.

In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.

Note: Extra muffins can be stored in a re-sealable freezer bag

I made these muffins last night and they are amazing! I tweeked the recipie just a bit. I used apples from a local orchard that I got at the Farmers Market. They were naturally sweet, so i cut the sugar in half, next time I will cut it in half again as I am trying to watch what I eat. I used almonds instead of walnuts. Added a few shakes of ground ginger. They are so good! My boyfriend was eating them steaming out of the oven. I couldn't bake them fast enough! I am going to make another batch and try pistachios and cherries instead of rasins and nuts. Many THANKS PAULA! I have been a fan of yours for a long time and will never forget your older show (In your old kitchen) where i learned the secret to cinnamon rolls. With a few tweeks to my moms recipie and your tricks I have a cinnamon roll that reminds everyone of my grandmas recipie (she took to the grave)
