Ingredients Add to grocery list

1 tablespoon olive oil
1 large red onion, thinly sliced
3 cloves garlic, minced
4 medium zucchini, cut into rounds
1 (8-ounce) can tomato sauce
Salt and pepper

Directions

In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic. Cook until the onions are tender, 3 to 4 minutes. Add the zucchini and cook until the zucchini is almost tender, 4 to 5 minutes. Stir in the tomato sauce and cook until the mixture is heated through. Serve immediately.

super yummy. i cheated and sauteed with bacon grease though. i only used a quarter can of tomato sauce.

Paula,I just want to thank you for all the help you have given me over these last few years both in my cooking and my personal life. I went thru a divorce a few years ago and I knew that every time I turned on your show I would always feel so much better. Your outlook on life and the love that you and all your family exhibit is so uplifting. I know with all the controversy that has happened has probably shaken your faith in people. Fell in love with paula and her cooking show many years ago. Love the food she makes and getting new ideas to feed company and my family. Love the Zucchini and Onion Saute, can't get much easier than that and how declious. Our garden has lots of Zucchini and I am constantly looking for ways to fix it. I will pass this on to you, when I am cooking a dish that calls for bell pepper cooked in the sauce, I add Zucchini that is in small chuncks along with the bell pepper. It adds texture and looks so pretty. Oh, and delicious too. The main ingredient in this dish is italian mild sausage. It is almost like the recipe that I just got from you. You can serve it over pasta or on a bun that has been split open, buttered and browned. The last thing I do is put cheese on the top of the ingredients just long enough in the oven to melt.

Paula, I love this! I do a version with a pinch of crushed red pepper flakes with the onions more tomato sauce and seasoning over penne or rigatoni ... Also excellent! Hang in there waiting to hear news of your book being picked up. I too was diagnosed with Type 2 a few years ago and love all your new lightened versions and the boys versions! Keep up all your wonderful work ... You will be vindicated we know you are a good person!

We eat bunches of zucchini and this recipe not only looks extremely simple for our summer heat here but it sounds like it would be good over pasta. Will definitely try this recipe.
