Servings: 16 to 20 servings

Cake:
1/2 cup cocoa
1 cup (2 sticks) butter, melted
4 eggs beaten
1 1/2 cups all-purpose flour
2 cups granulated sugar
1/8 teaspoon salt
1 teaspoon pure vanilla extract
1 1/2 cups chopped pecans
Frosting:
1 16-ounce box light brown sugar
1/3 cup cocoa
1/4 cup (1/2 stick) butter, softened
1/2 cup milk
1 teaspoon pure vanilla extract
1 10.5-ounce package miniature marshmallows
Preheat oven to 350 degrees.
Grease a 13x9x2-inch pan.
Stir cocoa into mixing bowl with butter.
Add eggs, flour, sugar, salt and vanilla.
Beat well with a mixer.
Fold in nuts.
Pour into prepared pan and bake for 35 minutes.
While cake is baking, prepare frosting.
Scald the milk.
Beat the brown sugar and butter together.
Add cocoa, milk and vanilla and beat until smooth.
Remove cake from oven when done and pour marshmallows over hot cake.
Pour frosting over marshmallows on top.

This cake is AMAZING!!! It's addicting! I do have a tip though. I wasn't sure if we were supposed to let the cake cool off before cutting it or just dig right in, I guess you can do either. So after I got the cake out I poured the icing over it and we didn't use marshmallows since we are vegetarian. Then we tried it and the cake fell apart but it was still good. And now after it's cooled off today I tried it and it tastes so much better and the cake stayed together. I would let the cake cook off before you eat it.

hi paula, i am an avid fan of yours,and use a lot of your recipes. i am origially from bessemer,ala. a little town just right next door from birmingham,ala. boy,what a change. i do love it here,still haven't gotten use the weather though.love,love,love your show,people here think your crazy if you say you had butter beans and corn bread.correct me if i'm wrong,but i thought you mentioned another grandchild, if so,congrats. we also enjoy seeing and hearing about your family.take care of yourself,my son in law also has type 2 diabetes,and it has been a challenge for my daughter.i have to say my she has really been good about changeing is eating habits.we are thinking of you and keeping you in our prayers. sincerely, evelyn. ps. absolutely love this cake.

This cake was unbelievable. So delicious. I made for a family party and was gone within minutes. My own family asked me to make another one the next day so that they could have it all to themselves!

I love your books and find the recipes wonderful, I bought one of your books last year spring it has some great recepies in it, how ever it came up missing, I am trying to remember one that I fell in love with, it was a dessert that was layered with coconut pudding frozen strawberry bannana and that is all I can remember, can you help me out I would go back and buy the book if i could remember the front cover lol, I have your cookware and it is great, in fact all that you do is wonderful:) Best Regards Dee Cole

I made this cake yesterday, and followed the directtion. However when making the frosting, my brown sugar did not disolve.I then heated the mixture over low heat for a couple of minutes. It stil had a granular texture. What did I do wrong? Thanks for your imput. Nancy
