2 tablespoons olive oil
2 teaspoons red wine vinegar
2 teaspoons freshly squeezed lemon juice
Salt and freshly ground black pepper
8 ounces (2 cups) macaroni
1/2 cup chopped fresh basil leaves
1 tablespoon chopped fresh parsley leaves
1 cup (4 ounces) shredded mozzarella
In a small bowl, whisk together the olive oil, vinegar, lemon juice, salt and pepper. Set aside
Bring a large pot of salted water to a boil over medium heat. Cook the macaroni according to the package directions. Drain the macaroni and transfer to a medium serving bowl. Add the basil and parsley and half of the dressing. Stir to combine. Let it sit for 1 minute to cool slightly, then add the mozzarella and the remaining dressing. Serve warm.

Some recipes say macaroni only. does it matter if its elbows or penne or any other type? which do you recommend for the warm macaroni with mozzarella? i would love to make it for our summer bbqs.

I was very enthusiastic about trying this recipe as I saw it prepared on television and it looked great. In fact, all the dishes you prepared that day looked magnificent. Among the other dishes prepared were double orange pork chops. Well, I tried both dishes tonight and although the pork chops were tough and the flavor of the orange didn't go through the mean, they were, at least, edible. As for the warm macaroni salad, it has to be the worst tasting crap I've ever put in my mouth. No kidding, it was the WORST!!!!!!! FEH! HORRIBLE STUFF, REALLY NASTY.
