1 cup zucchini, grated
1 cup carrots, grated
1/4 cup milk
1 egg
1/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup flour
2 green onions, sliced
2 tablespoon oil
In a mixing bowl, stir together the flour, baking powder, salt, and pepper. In another bowl, grate carrots, zucchini, and onions, and toss. In another bowl, beat together the egg and milk, toss into the bowl of grate vegetables, and stir. Add this to the dry ingredients and stir until combined.
Using a large skillet, heat 1 tablespoon of oil over medium heat. Spoon the batter by tablespoons into the pan, making a few pancakes at a time. Cook about 2 minutes on each side and golden brown. Add the remaining oil to the pan as needed. Serve pancakes at once.

I was watching your morning show the other day and saw how yummy your ooey gooey butter cake looked. I'm going to experiment on my family for Christmas!!! I know, we always say, "Don't experiment for Holiday dinners" but I just have to try this one. I pray it turns out half as good as you made it look!!

Ms Paula, I've been baking your basic bread and it is super! Today I added some honey for a different flavor. At any rate, for what ever reason, although the bread tastes wonderful, it turns out ugly. I end up using about 7 cups of sifted flour but still is sticky. Any ideas for me? Thank you so much for your website, I love baking now! Sandi

I made these last night for the first time. I had to tweak the recipe a bit due to the fact that my partner is 'onion intolerant'. So I used onion powder instead. Also added a tsp of mayo to the mix and oregano. Then I sizzled 'em up in both butter and oil. They turned out very good. Yummy.
