Tomato Mac and Cheese Tomato Mac and Cheese

Ingredients Add to grocery list

4 tablespoons butter, plus more for baking dish
2 cups uncooked elbow macaroni
2 tablespoons minced onion
4 tablespoons all-purpose flour
1 teaspoon salt, plus more for seasoning
3/4 tablespoon dry mustard
1/4 teaspoon paprika
2 cups milk
3 cups shredded Cheddar, divided
2 ripe tomatoes, blanched, peeled, and cut into 1/2-inch thick slices
Freshly ground black pepper

Directions

Preheat the oven to 375 degrees F. Lightly butter a 13 by 9 by 2-inch baking dish.

Bring 6 cups of salted water to a boil over high heat. Add the macaroni and cook until al dente. Drain and set aside.

Melt the butter in a large saucepan, over medium heat. Add the onion and cook, stirring constantly, until tender. Add the flour, salt, dry mustard, and paprika; mix well. Stir in the milk and cook until thickened, about 5 minutes. Add 2 cups of the shredded cheese and stir until melted. Toss in the macaroni and pour into the prepared dish. Cover the macaroni with tomato slices and season salt and pepper, to taste. Bake for 35 to 45 minutes. The last few minutes, top with the remaining cheese and return to the oven until the cheese melts. Serve hot.

My nephew Joshua love you and your sons. He wants to be a cook like Bobby he says when grow up. My mom always watches your show. My mom loves the way you cook and the different varities of food you make. I am from New Orleans, Louisiana where the cooking is the best!! My first time watching your show was on today which is July 27, 2011. I was very impressed with the cooking of your Tomato Mac and Cheese and the Meatloaf. I am new to the kitchen but my fiance says I do pretty good. I try to different varities of food so my expenses of fast food would stop. I love your Paula Dean keep up the good and I love that your sons are very good in the kitchen also. Keep up the good work!!

Puala, My 12yr old daughter Elena watches your show everyday and got me hooked on it. I am a mother of five soon to be 7, yes I am going to have twins in May. I see all the passion you put into making your family meals and was just wondering what do you suggest I cook for such a large family, that says I love them and is very yummy? this is delicious. we love any mac n cheese at our house. i love to try it different ways. we love ours with pieces of ham or bacon in it. this is good with the tomatoes on it also.

People went bananas over this. I couldn't find dry mustard at my supermarket so I substituted it with a mustard with seeds to rave reviews.
