Ingredients Add to grocery list

2 1/4 cups reduced-fat buttermilk baking mix
2/3 cup low-fat (1%) milk
1/2 cup granulated sugar
3 tablespoons butter, melted
1 tablespoon sliced almonds
4 cups strawberries, hulled and sliced
1 tablespoon grated orange zest
1 tablespoon orange juice
3/4 cup frozen light non-dairy whipped topping, thawed





Preheat the oven to 425°F. Spray an 8-inch round cake pan with nonstick spray. Line the bottom of the pan with wax paper. Spray the wax paper with nonstick spray.

Combine the baking mix, milk, 5 tablespoons of the sugar, and butter in a medium bowl just until blended. Scrape the batter into the pan. Scatter the almonds over top and sprinkle with 1 tablespoon sugar.

Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Cool the cake in the pan on a wire rack 10 minutes. Remove the cake from the pan. Carefully peel off and discard the wax paper. Cool the cake completely on the rack.

Toss the strawberries, orange zest, juice, and the remaining 2 tablespoons sugar in a medium bowl. Let stand until the sugar is dissolved and the mixture is syrupy, about 10 minutes.

Split the cooled cake in half horizontally. Place the bottom layer onto a cake plate; spoon the strawberry mixture over top. Spoon the whipped topping over the strawberries. Place the remaining cake layer on top. Serve immediately.

Please offer a recipe storage box for 5" X 8" recipe cards so your fans can copy your recipes by hand and write or print large enough to read as we cook. Sexy reader glasses fog-up, get sticky, greasy, get misplaced,and are a problem for grandmas and great-grandmas! When I give food as a gift or "in sympathy" " always like to include the recipe and tell where or whose it is. An example is at Thankshiving I baked your Ooy Gooey Cake and took it to the pharmacy where I shop as gratitude to the whole staff for taking such good care of two 3/4 century great-grandparents. They made many copies for every one and now include hints to cut "some" calaries. Everything I cook from your books or magazines I recopy on 5" X 8" cards first. HELP! Can't find a storage box. And please put the Deen gang and Michael's faces on it! Y'all are famous! I have many family recipes including a Kentucky Whisky Fruit cake with THE REAL MC COY. I'll share it with y'all if your if you want it.

I haven't tried this, but I love Bobby's new show! I am a diabetic and I manage my blood sugar by counting carbs. I have most of your cookbooks, and the boys as well. I am like Bobby in that I "rearrange a recipe to make it with less carbs. I also have several diabetic books where I look at the carb count and mix and match with recipes I like. I am glad that Paula came out and told everyone about her diabetes. I applaud her for that! I was curious about whether she is on insulin or not. I assumed she was because of endorsing a brand. The general public is not well-informed on diabetes and they think that sugar causes it, so they have been blasting her for not admitting sooner and not altering her cooking on her show. Diabetics KNOW what they can and cannot eat and how much so it is up to them to control what they eat, not Paula Deen! Hope the family keeps cooking for a long time. I would like to see a carb count added to recipes for those of us who have to count them. It's a bit less research before using a recipe. Love all the shows and the family!!!!!

I love the recipe. I was grateful that you had not dropped the granulated sugar for artificial sweetener. I have such a horrible allergy to the artificial sweeteners!!! Many in my family are diabetic. Thank God I am not. But I have many family meals that I have to cook and rather than cook two different meals I had to search for something to replace Splenda, Equal, Nutrasweet, etc. I have learned how to cook for a crowd with Truvia! Think about this. I made Lemon Meringue pie using Truvia for the filling sweetener and Golden Agave for the meringue sweetener. My sister in law accused me of lying that the pie was safe for my Mother in law to eat. My Hubby, Dan, Had to vouch for me and I had to give her my recipe so she could duplicate our favorite dessert. Truvia Is my Go to artificial / NATURAL sweetener and Golden Agave is my Husbands go to for Honey. My wish is that someone on a TV show would start showing the Diabetic public how to use the Natural sweeteners in place of Splenda etc. Just remember when Using Truvia that 1/3 of a teaspoon = 1 teaspoon. 1 teaspoon = 1 Tablespoon. 1/3 of a cup = 1 cup..... I have made sweet pickles, desserts, punches... I do not need artificial, but many times I have 4 or 5 guests who cannot have sugar. I bought a fabulous book with recipes for people with diabetes. BUT the whole book is based on Splenda. I have been taking recipes and reworking them for our family use. Family Reunions every year, well, I hold 4 Reunions every July. I have to have a stable of recipes I can pull out and know they will work... If it calls for sugar and I have a crowd coming, Truvia is my sweetener and if it calls for honey, Golden Agave. Paula and Family, I just love watchin Paula have so much fun in the kitchen! Her laughter makes my day! I have learned alot about cooking because of Paula and her boys.
