4 strips bacon
1 lb small red potatoes, unpeeled
1 green onion, sliced
1 boiled egg, chopped
1/4 cup mayonnaise
1 teaspoon Dijon mustard
salt and pepper to taste
Cook bacon until crispy. Drain, reserving a few tablespoons of the grease, and crumble. Set aside.
Place the potatoes in a large saucepan. Cover with cold water. Add a tablespoon of the bacon grease and some salt and place over medium-high heat. Bring to a boil and cook until the potatoes are tender, about 15 to 20 minutes. Drain and let the potatoes cool and then cut into bite-size pieces.
In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper for dressing.
Toss potatoes, onion, and egg in dressing. Add bacon. Serve chilled.

Being from Texas of course I love this recipe. It's big on taste with only a few ingredients. Simple, easy and tasty. My youngest prefers it warm. I like it either warm or cold. I use turkey bacon and omit adding any grease, also add chopped celery. Red potatoes are a must.

I have made this potato salad for over 49 years but I add chopped sweet pickles and diced celery, my dad used to make this when I was a kid. Oh and add a little of the bacon grease and some of the sweet pickle juice to. YUM

I have never made potato salad before, I have always been nervous about screwing it up. But this was soo easy to make and was very good!! Altho I did find that we has to add a lot more mayo and mustard or it was dry. But other then that very good.

Being from Texas, I had to try this potato salad. I doubled the recipe and I used a small onion instead of green onions and three eggs. I also used 3/4 cup of mayo and 2 tablespoons of the mustard. It was good and I would make it again.
