Taco Soup

The olives are optional—but I like this snappy Mexican soup better with them.

Servings: 12 to 16 servings
Prep Time: 15 min
Cook Time: 8 hours crock pot, 1 hour stock pot method
Difficulty: Easy

Ingredients Add to grocery list

Jalapenos
Chopped green onions
Grated cheese
Sour cream
Corn chips
1   1-ounce package ranch salad dressing mix
1   1 1/4-ounce package taco seasoning mix
1/2 cup green olives, sliced (optional)
1   small can black olives, drained and sliced (optional)
2   4 1/2-ounce cans diced green chilies
1   14 1/2-ounce can tomatoes with chilies
1   14 1/2-ounce can diced tomatoes
1   14 1/2-ounce can mexican tomatoes
1   15 1/4-ounce can whole kernal corn, drained
1   15 1/2-ounce cans pink kidney beans
2   15-1/2 ounce cans pinto beans
2 cup diced onions
2 lb ground beef

Directions

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large crockpot or a stockpot.  Add the beans, corn, green onions, tomatoes, chilies, olives, and seasonings, and cook on low setting all day (6 to 8 hours) if using a crockpot, or simmer over low heat for about 1 hour in a stockpot on the stove.  To serve, place a few corn chips in each bowl and ladle soup over them.  Top with sour cream, cheese, and jalapenos.

I make a different, easier version. I make three batches of taco soup and a double batch of potato soup for Bosses Day at the office every year and feed about 30 people. There's never any leftovers!! 1 pack ranch dressing 1 pack taco seasoning 1 pound browned and drained hamburger 1 can red kidney beans 1 can pinto beans 1 can black beans 1 can whole kernel corn 1 can Rotel 1 can diced tomatoes Put a crock pot liner in the pot, add all ingredients, and cook on high about two hours. Stir occasionally. Top with shredded cheese and sour cream. I also buy Scoops chips and use them like a spoon. The crock pot liner makes for easy clean up.

I love love love Taco Soup! Even though it's hot outside I'm gonna make a big pot of this to take for lunch this week. I do add more seasoning...2 packs of taco seasoning and 2 packs of Ranch dressing mix. And I use the pinto beans with jalapenos. smile

Love this recipe and use it quite often. Great for sharing with friends and neighbors. Even better the next day - if there's any left! Sometimes I substitute ground turkey for the beef and it's still delicious!

I have made this 3-4 times and EVERYONE LOVES IT! making it for camping. Putting it in ziplocolk bags. Just heat and serve with corn chips and sour cream! I will be the hit of the RIVER!!! thanks Paula!!!!

Super easy to make, and my family loved it. My husband must have said least half a dozen times how much he liked it and had to stop my daughter from getting 3rd's. Great meal for a cub scout fall campout. Even with all the tomatoes the kids loved it.
