2 tablespoons vegetable oil
4 sweet potatoes, peeled and cubed
Salt
Sugar
Preheat oil in large cast iron skillet or deep-fryer.
Place sweet potatoes in a large saucepan and cover with cold water. Bring to a boil, reduce heat, and cook until slightly tender, about 10 minutes. Drain the sweet potatoes well in a colander.
Add sweet potatoes to skillet or deep-fryer. Cook undisturbed for 5 to 6 minutes until nice and crisp. Garnish with sugar or salt, to taste.

I fried the sweet potatoes in canola oil they turned brown and a little bubbly on the out side but once i layed them on a paper towel they got soft and any crispyness they had left, what do i need to do to make sure they are real crispy and dont get soft? Thanks

I cooked the swt. Potatoes fries in my deep fryer. They were awesome. I found that you had to cook them a little longer if you like the crispness. I garnished them with a little Splenda. My family and friends loved them:)
