Sweet Mango Melbas

Ingredients Add to grocery list

6   ripe mangos
1/4 cup butter
1/4 cup white sugar

Homemade Raspberry Coulis:
3 cup raspberries
2 tablespoon lemon juice
6 tablespoon sugar

vanilla ice cream
raspberry syrup, for serving
fresh raspberries
mint, for garnish

Directions

Halve mangos and brush cut sides with melted butter. Sprinkle with sugar and grill cut side down, over medium heat for 4 to 5 minutes or until mangos are softened. 

For the coulis: 

Add 3 cups of raspberries to the food processor and purees until smooth. Strain through cheesecloth or strainer. In a saucepan, over low heat, add 1 to 2 tablespoons lemon juice, 6 tablespoons sugar and the raspberry puree. Stir or whisk until sugar dissolves. 

Serve mangos with warm raspberry coulis, ice cream, raspberry syrup, fresh raspberries and mint.

Hi Paula, Big fan of your show, I have made many, many of your recipes, they always turn out great. My child loves mango so we are really looking forward to making this mango melba recipe. My children like to watch your show sometimes and they are 4 and 6, so I think they will be true foodies like me. I have been collecting menus since the age of 9 and always worked in the restaurant business. We love you and your family. I hope to have the pleasure of meeting you and coming to your restaurant in Georgia. You have great taste in decor and food. (Your kitchen is the BEST.
