4 tablespoons unsalted butter
4 cups pumpkin seeds, roasted and salted
1 1/2 cups light brown sugar
2 teaspoons chili powder
In a medium saucepan, melt butter. Add seeds and toss to coat in butter. Stir in brown sugar and chili powder. Spread onto a baking sheet lined with parchment paper. Let cool completely.

I give this recipe 5 STARS! For years I've been so frustrated trying to roast my own pumpkin seeds - a lot of work and they never turn out tasting very good. Until this recipe. It's fabulous. SO Easy. SO tasty. I'm now on my third batch (I grow my own pumpkins so always have a lot of seeds.) I wouldn't change a thing with this great recipe.

I made a half batch of these pumpkin seeds and they turned out terrible. Nothing would stick to the seeds. Sorry, Paula. I love you and probably every other recipe of yours I have tried but this one was a disappointment.
