Spinach and Strawberry Salad

Ingredients Add to grocery list

1 (10-12-ounce) package baby spinach, washed and dried
1/3 cup sliced almonds, toasted
1 quart strawberries, hulled and quartered
1 whole cucumber, peeled, seeded, and finely diced

Dressing:
Juice of half a lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seeds

Directions

In a large salad bowl, toss together the spinach, almonds, strawberries, and cucumber. In a small glass dish or jar with a tight-fitting lid, combine the lemon juice, vinegar, sugar, oil, and poppy seeds. Whisk in the glass dish or shake if using a jar.
Dress the salad right before serving.

I had this salad this summer, it was so light and refreshing. I have it to a few guest and they love it. great salad. I substituted blueberries for the almonds.

I get raves every time I fix this salad. Even those who wouldn't ordinarily want fruit in their salad. The dressing is the best!
