Sparkling Mint and Ginger Lemonade

Sparkling Mint and Ginger Lemonade Sparkling Mint and Ginger Lemonade Recipe Courtesy of

Servings: 6 Servings
Difficulty: Easy

Ingredients Add to grocery list

2 cups water
1 cup sugar
¼ cup minced fresh ginger, plus more for garnish
¼ cup mint leaves
2 cups freshly squeezed lemon juice
1 liter cold seltzer





Combine water, sugar, ginger, and mint in a medium saucepan and bring to a boil. Cover, remove from heat, and allow to steep until room temperature. Strain out solids and discard. Add ginger syrup to a pitcher and stir in lemon juice and seltzer. Serve over ice and garnish with mint.

I'm not writing you about your lemonade, although I'm sure it's good and better than mine. Instead I'm writing you about you're article in this week's PEOPLE magazine. Like you I was diagnosed with type 2 Diabetes about 3 years ago. Also like you I was in big denial about it. I couldn't have this! Noone in my family on either side had this awful disease! I ate whatever I wanted and just for the fun of it I did switch to Diet Coke. Depression made me eat even more. I did quit smoking after having a heart attack during a stress test at Pheobe Putney Memorial Hospital at which time they rushed me into surgery, on the way asking me if any family member was there with me and how could they get ahold of one. They put 3 stints in my heart. At my 1st check up my cardialogist told me that the quitting smoking was the first step in getting healthy(after 41 years)now I had to get the excess weight off. He said at the weight I was at now it was like i was taking a long walk on a short bridge. Still in denial about being a diabetic, I cut down eating a little bit but not much. Being so proud of myself for doing something that I never thought possible and that was putting down cigarettes. Malboro 100's in the box,If only I could have a penny for every pack I bought of those in a store. They started out being .35 cents and ended up being atleast $5.00 a pack. My kids were so proud of me! Well things were all fine and good until I went to the doctors 2 weeks ago and my blood sugar was 403 and my doctor asked me what in the world had I been doing different. Was that ever a wake up call! Now my refrigerator looks like yours Paula except not quite that much, haha So far I'm not losing weight but atleast I'm on the right road to getting healthy. My biggest dream would be too get to meet you and follow you around like a puppy dog for about a week and see exactly what you are doing different than me. I so admire you because I too was married to an abusive man and lived through hell and back. But I'm still kicking and screaming that one day I'm gonna be happy! You are truly amazing and you look great minus that 30 pounds! I just wanted you to know what an inspiration you are to me!!! Sincerely, Kathy
