6 large eggs, hard-boiled and peeled
1/3 cup mayonnaise
3 tablespoons shredded Cheddar
2 tablespoons salsa
1 1/2 tablespoons sour cream
1 tablespoon chopped green onion, plus more for garnish, optional
1 teaspoon ground cumin
Salt and freshly ground black pepper
Halve eggs lengthwise. Remove yolks and add to a small bowl. Mash the yolks with a fork and stir in the mayonnaise, Cheddar, salsa, sour cream, green onion, and cumin. Add salt and pepper, to taste, and blend well.
Fill the egg whites evenly with yolk mixture and garnish with additional green onions, if desired. Arrange in a container and store, covered, in the refrigerator until ready to serve.

I made this recipe with 10 eggs to take to a neighborhood Chili Cook-off. They are so good and were gone in a minute. For 10 eggs, I doubled the filling ingredients and there was about 2/3 cup leftover and it was good as a dip with tortilla chips. I used reduced fat cheese and sour cream plus canola FF mayo.

Love the deviled eggs, something to add to increase the flavor, bacon bits, we prefer the turkey bacon. Just a thought.

these are the best deviled eggs I have every had. They are very easy to make, and a nice twist on the traditional deviled eggs. I made these for Easter family gathering and they were a huge hit...making them now for a memorial day pool party.
