4 cup all-purpose flour
crab boil seasoning (recommended: Old Bay)
salt
8 (5 to 6-ounce) catfish fillets, skin removed
1 cup corn meal
Oil, for frying
Heat a fryer or a deep pot halfway filled with oil to 350 degrees F. Sprinkle both sides of each catfish with salt and crab boil seasoning. In a separate bowl, combine the flour and the cornmeal. Dredge the catfish in the flour mixture and place in fryer. Deep fry for approximately 7 to 8 minutes until done. Drain on paper towels.

Hi Paula. I just cooked the absolute worst fried catfish, so bad my little girl said "YUCK!" My mistake: I got the recipe from Saveur.com. It said to put the seasoning in with the cornmeal and flour, then dredge the fish in it. The fish ends up completely flavorless! After dinner, I checked your site, and sure enough, you say to season the fish first, and then dredge it. I am sooo sorry I did not consult your site first. Dear Paula, I have watched your show since I was a kid and fell in love with your cooking. Little did I know I whould meet the man of my dreams who happens to be from down south, for the most part we both eat the same way but its hard to get veggies down his cute but totly davoted smile. Help What should I do He likes mushrooms and some raw veggies but everything else is a complet Yack.
