Hi Paula. I just cooked the absolute worst fried catfish, so bad my little girl said "YUCK!" My mistake: I got the recipe from It said to put the seasoning in with the cornmeal and flour, then dredge the fish in it. The fish ends up completely flavorless! After dinner, I checked your site, and sure enough, you say to season the fish first, and then dredge it. I am sooo sorry I did not consult your site first. My family loves your food, and I appreciate all that you do for families everywhere. Warm Regards, Kim Sadowski
