Directions

Heat a nonstick griddle to medium heat while you prepare the pancake batter. Combine flour and salt. Mix milk, eggs, oil together and add to flour mixture.

Butter your skillet and then add 1/4 cup of oil to the skillet, which keeps butter from burning. Ladle about 1/4 cup of the batter, for each pancake, onto the skillet. The bottoms of the pancakes should brown in roughly 2 to 4 minutes. Flip to finish cooking the other side. Cook until lightly golden brown.

Reserve pancakes in a preheated 200 degree F oven until ready to serve.

For the scrambled eggs:
Preheat a large nonstick skillet over medium heat for 1 minute. Crack eggs into a large mixing bowl and whisk them until the whites and the yolks are combined. Season with Paula’s House Seasoning. Add butter to the skillet and allow melting. Add the eggs and reduce heat to medium-low. Add sausage. Stir frequently until soft small curds have developed. The more you stir the more the creamier the eggs will be. Remove from heat.

For assembly:
Place slice of American cheese on top of pancake, top with scrambled eggs. Top scrambled eggs with another slice of cheese and place another pancake on top. Add a dab of butter and smother with maple syrup.

Use bacon and it is very good also. It is easier to keep lit than smoked sausage.

These really are great! I started making them out of necessity a few years back when I was co-sponsoring a "Breakfast with Santa" as a Relay for Life fundraiser. I had been cooking all morning and was beyond hungry because I hadn't had time to stop and eat. I grabbed a pancake and filled it with the breakfast fixin's poured on some syrup and folded it like a taco, continued cooking with my right hand and munched on my breakfast with the other. I now serve them at brunch or even a quick meal on the run. People who haven't had their pancakes this way before seem to like not having to use a fork and be able to move about and talk with other people while they enjoy a their food.

Dear Paula, I am one of your biggest fans. I am a down home country backwoods girl myself. I was raised by my grandmother in an old rickity two story house in Jackson, NC which is in Northampton County. I love to cook because of my grandmother. I watch your show all of the time. I have even tried a couple of your recipes. You are a WONDERFUL cook. My two daughters love your recipe for the Mini Corndogs. I end up making them for my girls at least three to four times a week. Your recipes really do have that southern taste that reminds me of the country home I grew up in. From walking barefoot through the grass to swinging on my homemade tire swing that my uncle built for me from the pecan tree in the back yard. I just wanted to let you know that you have made me a better cook and to keep up the awesome work that you do in the kitchen.
