Salmon Salad

Ingredients Add to grocery list

2 cup cooked and flaked salmon
2   hard boiled eggs, crushed
1   red or green bell pepper, diced
1   cucumber, peeled, seeded and diced
1/2 cup onions, chopped
4-5 tablespoon mayonnaise, or enough to moisten
1/4 teaspoon cayenne pepper (optional)
salt and pepper to taste
juice of 1/2 lemon




In a large bowl lightly toss salmon and crushed boiled eggs.  Mix bell pepper, cucumber, onions, and mayonnaise together.  Add seasonings.  Pour over fish, squeeze lemon over dish and toss lightly.  Serve over lettuce or as a sandwich.

My best friend loves salmon so I made this for her. She loved it and I make it for her whenever she is able to come over.
