2 fillets, canned salmon, flaked
1 egg, beaten
2 tablespoons green onion, sliced
1/2 cup bread crumbs
vegetable oil for frying
Over medium heat, heat oil in a medium skillet. Combine canned salmon, beaten egg, green onions and 1/4 cup bread crumbs. Form into patties and dust with additional bread crumbs. Fry until golden brown, about 2 minutes on each side.

Delicious, just like home! I have a question. With the salmon mixture can I use corn meal instead of bread crumbs and can I fry them in canola oil instead of vegatable? I don't want to mess up the receipe. I just need to alter it a little to accomadate my current health issues. Paula U always make me feel like home and I don't miss it has much has I use to since I started watching your shows on a regular basis. Thank U for the comfort foods as well. I love making salmon croquettes. I have a recipe to share, I don't use measurments just a little of this and a little of that. Fresh salmon, crab (imitation or fresh) egg, onion, seasonings (to liking) cornmeal and flour mixture. Form into patties. Fry with veg. oil and enjoy
