Root Mash Zucchini Crown

Ingredients Add to grocery list

1 cup parsnip (diced)
1 cup turnip (diced)
1 cup carrots (diced)
1 tbsp fresh basil
½ tsp Paula Deen House Blend Spices
4 tbsp Paula Deen Garden Herb Butter
Liquid rendered from boiling of vegetables
8-10 zucchini crowns


Boil vegetables 10-20 minutes (until tender) and reserve all liquid. In food processor or blender mash root veggies together with Paula Deen garden herb Butter and season to taste with Paula Deen House Blend Spices and fresh basil. After all veggies are blended, make zucchini crowns, hollow them out and blanch them in reserved water. Pull out drain and fill 8-10 zucchini crowns with root mash, using a spoon or piping bag.
