1/2 cup mayonnaise
2 lemons, zest finely grated
2 teaspoons paprika
1 teaspoon celery seeds
1 teaspoon salt, plus additional for seasoning
1 teaspoon freshly ground black pepper, plus additional for seasoning
Pinch cayenne pepper
4 (8-ounce) boneless, skinless chicken breasts
Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
In a small bowl, whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne. Season the chicken with additional salt and pepper, to taste. Arrange the chicken on the prepared baking sheet. Slather the mayonnaise mixture over the chicken. Bake until the juices run clear when the chicken is pricked with a fork, about 20 to 25 minutes. Transfer the chicken to a serving platter and serve hot.

This Roasted Spicy Mayonnaise Chicken Breasts is absolutely wonderful. The flavors in this recipe is outstanding and the chicken came out so tender and moist. I will definitely make this again. Thank you Paula for such a wonderful, easy and tasty dish.

This is by far my husbands favorite chicken recipe and he is always happy when I tell him I am planning on making it for him! I packed it in his lunch one day and he let a coworker try some, and word spread about how good it was and now I have passed along the recipe to 5 of his coworkers.
