5 pounds red and white table potatoes, cut into 1-inch pieces
3 tablespoons olive oil
2 teaspoons minced garlic
1 1/2 teaspoons salt, divided
3/4 teaspoon ground black pepper, divided
1/4 cup butter
1 large onion, chopped
1 tablespoon balsamic vinegar
Blue Cheese Dressing, recipe follows
Blue Cheese Dressing:
3/4 cup mayonnaise
1 (5-ounce) container crumbled blue cheese
2 tablespoons sour cream
1 1/2 teaspoons prepared horseradish
1/2 teaspoon ground black pepper
Preheat oven to 450 degrees F. Line a large shallow roasting pan with non-stick aluminum foil.
In a large bowl, combine potatoes, olive oil, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper, tossing gently to coat. Arrange potatoes in a single layer on prepared pan. Bake for 35 minutes, until potatoes are tender and lightly browned, stirring occasionally. Remove from oven and cool.
In a large skillet, melt butter over medium-low heat. Add onions; cover and cook for 30 minutes, stirring occasionally. Uncover and add vinegar. Stir until vinegar evaporates, about 1 to 2 minutes.
In a large bowl, combine potatoes, onions, and Blue Cheese Dressing. Serve immediately, or cover and refrigerate. Bring to room temperature before serving.
Blue Cheese Dressing:
In a small bowl, combine mayonnaise, blue cheese, sour cream, horseradish, and pepper. Cover, and refrigerate.
Yield: about 1 cup

Made this recipe for my co-workers . . an appreciation dinner/bbq and they simply loved this salad! Its different with a kick to it . . . blue cheese YUM! I had to make copies to give to my co-workers ![]()

I love this recipe! I have never been a fan of potato salad, but this recipe has made me a potato salad lover. I love roasting the potatos and the crumbled blue cheese and horseradish add a tasty bite to the dressing. This recipe is a compliment to a dinner served with green beans and roast beef.

This cake is so refreshing and easy to prepare. The lemony zing is perfect for a Spring or Summer day. I followed the directions exactly and had no difficulties with the cake rising, and the icing is to die for sweet and tart. Try this delightful recipe and your family will clammoring for more!

Oh, my gosh! This is so delicious! Even our sons, who normally do not like potato salad, loved this one! We ate a whole 5 pounds of potatoes of this recipe in 1 day! We used only red potatoes (because we love their flavor so much) and substituted feta cheese (because my husband is allergic to bleu cheese). This recipe is phenomenal! My family asks me to make this every week! I'm a teacher and I've passed on this Paula Deen recipe to my colleagues at school. They ask me for more Paula Deen recipes every week that I've tried and loved! I tell them I love them all! I'm already getting my recipes ready for Christmas. My suggestion: If you have not already done so, purchase the Paula Deen Christmas recipe book. I use these recipes every holiday. My family looks forward to them! My husband made this potato salad for our Labor Day weekend, family, barbeque. It was fabulous - I would give it more than 5* if I could! Even our son who, normally, does not like potato salad, loved it and went back for seconds and thirds! The roasted potatoes, onions, and garlic really made it! We used only red potatoes, though, because we love their taste and, since my husband is allergic to bleu cheese, we substituted feta cheese! This was a delicious take on potato salad. Easy to make and delicious served while still slightly warm. I loved the roasted potatoes instead of usual boiled potatoes, and the carmelize3d onions made it!
