Prep Time: 35 min
Cook Time: 25 min
Difficulty: Moderate
For the cake:
1 teaspoon vanilla
1 cup buttermilk
1 teaspoon salt
2 1/2 cup cake flour
1/2 pound (2 sticks) butter
2 ounces red food coloring
2 tablespoons cocoa
2 cups sugar
2 eggs
1/2 teaspoon baking soda
1 tablespoon vinegar
For the filling:
1 (3 oz.) envelope cheesecake flavored instant pudding
2 cups milk
2 cups freshly whipped cream
For the garnish:
1/4 cup pecan pieces
fresh mint leaves
Preheat oven to 350º F.
Prepare three 8” round cake pans with non stick cooking spray and set aside.
In a large mixing bowl using a hand mixer, beat eggs, butter and sugar until creamy. Add cocoa and food coloring. Mix until well combined.
In a medium mixing bowl, sift together flour and salt. Add to creamed mixture alternating with buttermilk. Blend in vanilla.
In a small bowl, combine soda and vinegar and add to batter. Pour into prepared pans. Bake for 20 to 25 minutes, or until tests done. Allow cakes to cool completely.
Meanwhile, prepare instant pudding according to the package directions using 2 cups milk. Allow pudding to set up in the refrigerator for 10 minutes. Using a spatula, gently fold in whipped cream.
To assemble the trifle, cut the red velvet cake into 1 inch cubes. Place an even layer of cubed cake in the bottom of a trifle bowl. Top with 1/3 of the pudding mixture. Repeat the layer process so that the final layer is pudding. Top with pecan pieces and fresh mint leaves. Chill until ready to serve.

Just made this beautiful and festive looking recipe to take to a large Christmas Eve party. Wish someone had mentioned that there isn't much cream filling. I would have added another box of cheesecake pudding or doubled the filling ingredients. Even though I divided it pretty equally the pudding mix didn't cover all the cake on top. My cake came out perfect though! I think the trick is to mix the vinegar and baking soda very quickly and get it mixed in the cake batter and in the oven quickly. I baked the cake yesterday, cooled it completely, covered it and put it in the fridge so it was firm and easier to cut into cubes. Also wondering about the whipped cream(?) Is it suppose to have any vanilla or sugar mixed into it or is the pudding sweet enough??? I put a little in hoping I didn't make it too rich. I'll be proud to carry this beautiful dessert into the party tonight! Merry Christmas, y'all!

I cannot wait to make this for my family. I was so surprised to see the candy dish you have this cake in Paula. I have the same dish. It was handed down from my mother. Now I know when I do make this triffle I will think of you and my mother too when I put it into my candy dish. Thank you Paula for using this wonderful dish and for all your great recipes.

Dear Paula, Remer and I own the exact same dish in which your red velvet trifle is displayed. We inherited this pretty dish from Remer's 95 year old mother and are curious as to the history behind yours. Wishing you and Michael a Happy New Year. Susan and Remer

I just want to say that I love yalls recipes they are wonderful and have a great presentation. I cook alot for events going on at our church, so looking good means alot to get people to try something different... The only problem right now is, my husband and I are both on a very strict diet that allows us only 900 calories for the day and 20 carbs.. In my cooking and baking, I don't even get to taste anything that I am cooking (or baking)....So I sure want it to taste good so I don't have to learn later if it is or not...haha Thank Yall for yalls recipes!! Paula, I tried your Red Velvet Trifle. If you look over the recipe you'll notice it calls for 2 sticks of butter, but the recipe never tells you when to incorporate it. Now, I should have known to add it with the eggs and sugar, but I was so caught up in reading the recipe, I didn't notice the butter was still on the counter until I put the batter into the cake pans. You might want to have someone correct that. Thanks!

*WHAT THE?!?! This recipe calls for two sticks of butter, yet the directions don't tell you when to include the butter!! I assume it goes in when the sugar and eggs are beaten together in the beginning. When I made it, I didn't realize until I had mixed everything together and I was rereading the ingredients list to make sure I included everything that I never added the butter. I thought I forgot, so I reread the directions and that's when I noticed it never tells you WHEN to ADD the butter!!
