Recipe Courtesy of Paula DeenServings: 6 Servings
Difficulty: Easy
2 pounds boneless skinless chicken thighs
2 tablespoons canola oil
1 onion, finely chopped
2 cloves garlic, finely chopped
3 tablespoons apple cider vinegar
1 cup ketchup
½ cup water
2 tablespoons light brown sugar
1 tablespoon Worcestershire sauce
¼ teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
6 whole-wheat hamburger rolls
Coleslaw, optional
Season the chicken thighs on both sides with salt and pepper. Heat oil in a large high-sided skillet over medium high heat. Once it shimmers, add the chicken thighs and sear until golden brown, about 4 minutes on each side. Remove to a plate. Add onion and garlic and sauté until tender, about 3 minutes. Stir in apple cider vinegar; using a wooden spoon stir up any browned bits on the bottom of the pan. Add ketchup, water, brown sugar, Worcestershire, cayenne, and salt and pepper. Bring to a boil then reduce to a simmer. Add the chicken back to the pan as well as any juices that have accumulated on the plate. Turn heat to low, cover and cook for 40 minutes.
Once chicken is cooked, shred the meat with a fork in the skillet. Toss the meat through the sauce so it’s covered. Divide the pulled meat between 6 hamburger buns. Serve alongside with some coleslaw, if desired.

I've got this in the crockpot right now for dinner tonight. I tasted the sauce and it tasted a lot like ketchup. I followed the recipe exactly, so hopefully once it all cooks together it'll be better. Knowing this is a Paula Deen recipe, I'm sure it'll come out fantastic!

OMG Me and my girlfriend made this for dinner one night and it was the best thing I ever tasted. We wanted something beside fried chicken or grilled chicken breast and this was a very simple alternative. I like my food a little more spicy so I added crushed red peppers. Thanks for the recipe.

We're cooking these tonight, and we're absolutely excited. To the commentators who spoke of Paula's health, we're all ground people here. I know that two much of something is never good. I wouldn't eat a burger everyday. I know that a butter rich pound cake is full of fat, sugar, and calories. You either chose to eat this items or you don't. Moderation is key. Paula didn't MISLEAD you. She never said that she made DIET food, she makes DELICIOUS food. Go Paula!!!!!

I made your'e pulled bbq chicken sandwich's on 3-1-12 and my family and I just loved them! Tku for what you and son's do for us I ordered pot's and pan's and your'e knife's they just got here on 2-27-12 and I cook with them every nite!Again tku for everything ya do to teach us!

Yanno, I really don't watch the cooking shows too often. ...and honestly have probably seen your show once or twice, but I felt a kinship with you, recently. I found out a year ago I had diabetes, too. ...and some folks will not understand it, but I simply went on living my life the way I had done it before. Now, some folks may call it ignorant, but I call it denial. It's only now I'm able to think about choices and try not to succomb to my old habits.
