Potato Croquettes Potato Croquettes


Servings: 15 croquettes
Prep Time: 40 min
Cook Time: 12 min
Difficulty: Easy

Ingredients Add to grocery list

sifted dried breadcrumbs
3 tablespoon flour
2   egg yolks
1/2 teaspoon chopped green onion
1/2 teaspoon pepper
2 tablespoon milk
4 cup mashed potatoes
peanut oil, enough to fill pan 1/2 inch

Directions

Add milk, salt, pepper, chopped onion, beaten egg yolks and flour to mashed potatoes. Chill and then shape using an ice cream scoop. Roll through breadcrumbs. Fry each croquette in shallow grease until brown on all sides.

Cook’s Note: Cook in small batches, giving each croquette at least two inches of space around it to not overcrowd the pan. This prevents the croquettes from crumbling while frying.

Just tried making these for dinner. It was a horrible mess. All the did was fall apart and I made them exactly as the recipe said to. I ended up adding amlmost 2 cups of flour to get them to hold together. Tastes just like regular potatoe cakes but with much more work! Was a total let down!
