1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs (recommended: Ritz)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan
Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter.
In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.
In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.
AWESOME!! So easy and so good. My sister made this to accompany the Easter Ham; and although she is a great cook, this dish stole the show.

This is one of the best recipes I have found in a long time. We paired it with stuffed pork chop and roasted garlic sauteed green beans. It was fabulous!

I make this @ Thanksgiving & Christmas, it's delicious with turkey or ham. I add cream cheese to the mixture which takes it to another level!I use the whole sleeve of crackers with the butter, but no juice for the topping.My family & friends love it!

Everyone raves when I make this casserole. I've made it on many, many occasions. Super easy & yummy! I quickly found out you do not need to use the reserved pineapple juice. Makes it too runny. Also, I use more than one cup of Ritz cracker crumbs. A whole sleeve usually works best. Last but not least, I use one beaten egg. Holds it together better & makes the perfect consistency you want in a casserole dish.

I've had a pineapple casserole before and it was delicious, just forgot to ask for the recipe. Found this one and tried it last night. Like most of Paula's recipes (no flaw for being a good ol' Southern cook), this one has WAY TOO MUCH BUTTER. Turns it into fat congealed soup. If I try again, will definitely only use ONE stick of butter.

I made this last night. I made a few changes, due to items on hand and to reduce portion. I used one can of crushed pineapple, one cup cheese and one stick margarine. I still used one cup of Ritz, and it was soooo good! Reminded me of pineapple upside down cake. Yummy!

We have made this casserole for years with a little tweak - we don't add the cheese. We love it with our Easter ham dinner. Great hot or cold. The kids (teens) all fight over it!

Perfect!! My husband is a diabetic and he love's this ... I cut back on sugar, I don't use any ... 1/2 cup of Splenda and I use the crushed pineapple that is sweetened with Splenda also. Can't tell the difference ... (can't find chunk with Splenda in my area) I do use a stack of Ritz ... Enjoy!
