Difficulty: Easy
1 cup fresh pineapple chunks
1 cup unsweetened coconut milk
1 banana
1/4 cup ice cubes
2 teaspoons honey, optional
pineapple wedges, for garnish
In a blender, combine the pineapple chunks, coconut milk, banana, ice and, if desired, honey. Puree until smooth. Pour into 2 large glasses. Garnish each serving with a pineapple wedge.

I just made this for me and my two boys (ages 2 & 4) and they loved it (no surprise!). We called it a pineapple smoothie.
I used vanilla coconut milk and left out the honey. I calculated the calories for serving 3 (approx. 8 oz per person) and it is just 93 calories each - a great mid morning snack for anyone!

@ Brooke Gardner ....please grow up and function in the real world!! You can control what you do, say, and expose your children to but, please refrain from telling the world how you would like it to be! Call it what you want it to be, a pina colada or pineapple smoothie!! You need to pick up a book and improve your mind rather than surf the net looking to pass judgements!!!! I just made this. It's ok. But next time I'm only going to use half a banana and more pineapple. I like my drinks tangy thought. This tasted to much like a plain strawberry banana smoothie.

The Recipes that i have seen so far I can't wait to try then 1 day soon. Right now the main dish is Turkey or Ham for the Holidays,but If it was left to me i would eat just plain old Yard Bird Lol..(Chicken)but we will see what I might have this year.
