4 tablespoon (1/2 stick) butter, melted
2 eggs, beaten
1 tablespoon all-purpose flour (recommended: Mochinko flour)
3/4 cup sugar
1 (3 1/2-ounce) can shredded sweetened coconut (about 1 cup)
1 cup coconut milk
1 (9-inch) unbaked pie shell
Preheat oven to 350 degrees F. In a large bowl, combine melted butter, eggs, flour, sugar, coconut and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.

I would love to see you make a coconut cream pie with the meringue topping on your show. I made one using homemade cooked custard out of my old tried and true Better Homes cookbook, and it came out with the filling having a kinda powdery texture. I have never had that happen on any baked custard type of pie filling. Could it have been the shredded coconut or what? Of course it happened when we really wanted a "good" homemade pie. HELP!! We watch your show every Sat. morning and you are part of our coffee hour. If you cannot do it on a show, would you please send me an email with some advice. Thanks Paula. Ginger
