Vegetable oil, for frying
1 package dry ranch seasoning mix
1 cup panko bread crumbs
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup all-purpose flour
3 boneless skinless chicken cutlets, cut into 1-inch cubes
Pour oil to a depth of 2-inches in a large Dutch oven or deep-fryer. Heat oil to 360 degrees F.
In a small bowl, combine ranch mix, panko and salt together. In a second bowl add the egg mixture and in a third bowl add the flour.
Dredge chicken cubes in flour, dip in beaten egg, and then coat in panko mixture.
Fry chicken nuggets, in batches, for 5 to 6 minutes or until done. Serve with dipping sauce of choice.

Well, it's Wednesday and that's Braiden's night to help Grandma cook supper! Tonight we made Paula's Chicken Nuggets,french fries, and a salad. He had a ball tossing the chicken in the flour. Made a wonderful, awful mess! He beat the egg pretty well and rolled those nuggets in the bread crumbs. The most amazing thing was, for a 6 year old to peel 6 potatoes and not leave a trace of peel on them...and not cut himself with the peeler! He was so proud of himself! Then it was out to play with Grandpa in the back yard while Grandma deep fried all the goodies! He decided to rename them "B-Nuggets"! So, So good, no matter what they are called!
