Recipe Courtesy of Paula Deen Prep Time: 15 min
Cook Time: 25 min
Difficulty: Easy
1 cup soft butter
1 cup packed brown sugar
1/2 cup granulated sugar
2 medium eggs
1 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cup rolled oats
1 cup butterscotch chips
3/4 cup chopped pecans
Preheat oven to 350 degrees F. Lightly grease cake shaped pan.
Using an electric mixer, cream butter, brown sugar, granulated sugar, eggs and vanilla together. Stir in flour, baking soda and salt. Add remaining ingredients and mix well. Scoop into pan. Bake for approximately 20 to 25 minutes. Cool on baking sheet or cooling rack.

Yield - 1 large dozen cookies

These are some of the tastiest Oatmeal cookies I have ever made and I have made plenty of cookies in my lifetime! The bake time in my experience is right between 13-15 minutes (depends on your oven temp). The "scoop into pan" as I took it was in big heaping stacks about 1 1/2 in diameter for each cookie. My cookie did not flatten out, they were perfect, so my advice would be big heaping spoon fulls, not pressed down or flattened on the cookie sheet. I hope that helps, I was confused too. PS - I also double my batch to make enough for a large family plus some and I use almond extract instead of vanilla which makes the taste amazing!!! Bon Apetite!

cookies are very good, I made them smaller and so then they did not spread out as big,they were a good size, baked them for 15 minutes, crispy , very very good.

I haven't made these yet, but I am confused. Are these cookies or are they bars? I can't imagine cookies being baked for over 20 minutes...it says scoop into pan. More elaboration?

I made these yesterday. SOOOO GOOOD. My favorite cookie right now! My tips/thoughts: I didn't use a cake pan. I rolled the dough into 1 dozen balls, placed them(6ea.)on 2 parchment covered cookie sheets and placed them in the fridge till the dough was chilled. (about 45min-1hour). This will keep them from spreading too thin! I baked one sheet at a time for about 10min. DON'T wait for the center of the cookie to get golden! Once the edges are golden brown pull them out and (VERY IMPORTANT) allow the cookies to rest and continue to bake on the sheet for 5-8min before moving to a cooling rack to cool completely. The cookies are MUCH bigger then the picture makes them seem. I do not advise making them smaller though or they will probably thin out and be too crispy to eat. ENJOY!!!!!!!!!!!!!!

This is the best and easiest oatmeal cookie recipe I have found!! It is awesome and you can switch the butterscotch chips for chocolate and peanut butter and make a variety!
