Mini Onion Quiches

Ingredients Add to grocery list

2   eggs
2 tablespoon butter
1 cup chopped green onion with tops
4 tablespoons (1/2 stick) butter, melted
3/4 cup crushed saltine crackers
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grated Swiss Cheese

Directions

Preheat oven to 300 degrees. Combine cracker crumbs and melted butter. Divide crumbs among mini muffin tins that have been sprayed with no-stick cooking spray. Saute onion for 10 minutes in 2 tablespoons butter. Cool, then divide evenly on top of cracker crumbs. Beat eggs; add milk, salt, pepper, and Swiss cheese. Pour by spoonfuls on top of onions in tins. Do not fill to top, as they will run over. Bake until set, about 15 to 20 minutes. Do not over bake. May be stored in refrigerator or freezer. Warm in oven before serving.

Paula did it again!! I made these for a bridal party as a treat while they were all having their hair done.. They were filling enough to get them through the morning but yet not too heavy to leave the bride and bridesmaids feeling too full for the big day.. I added a little bacon to them for a little extra kick.. If you do this, omit the salt.. GREAT recipe!!

OMG!! These are delicious! I made them for an upcoming party (doubled the recipe) and had to hold myself back from eating them all! I used 1/2 each of fontina and gruyere cheese, because I don't care for swiss. You won't be disappointed. Try this recipe!!

I made these for our office monthly pot luck, and everyone loved them. One girl claims to hate onions, but she ate three of these. Go figure!
