Best bananna nut muffins I've ever made. Not sure how the coffee compliments the recipe ... but they come great! 5 star recipe.

1 1/2 tablespoons of strong coffee. Do you mean already brewed coffee or the actual ground coffee?

Dear Paula, I have been home in N.C. a week from my Floria home for six months, leaving Michael's banana coffee muffins receipt in Fl. So, I looked it up on the internet and there it was. I have made this so many times you just wouldn't believe. My husband adores these and so do my friends down the street. They are perfect, not to sweet. I make a butter cream frosting for the tops of the muffins. Just wonderful. Please give Michael a big hug and a big kiss on the cheek for this receipt. You know us southern girls we have to show the love. Thanks again, a loyal friend for life, Patsy Cross

I have made these muffin recipe twice now, my family loves it, even my pickiy daughter that does not like bananas ask for it. I did use whole wheat flour, I just wanted to see how it taste. Couldn't really tell the difference. The first time I left out coffee, daa!, we drank it all. I have made this 1 of my favorite banana recipes. It's a keeper for sure! Thanks Paula & Michael for sharing.
