Servings: 4 Dozen
Prep Time: 35 min
Cook Time: 30 min
Difficulty: Moderate
1 teaspoon vanilla extract
2 cup sugar
4 large eggs
2 sticks butter
4 ounce unsweetened chocolate
1 cup all-purpose flour, sifted
Frosting:
4 ounces (4 squares) unsweetened chocolate
1 cup (2 sticks) butter, softened
1/2 cup pasteurized egg substitute, such as Egg Beaters
1 teaspoon vanilla extract
One 1-pound box confectioners’ sugar, sifted
4 cups mini marshmallows
Preheat oven to 350 degrees. Grease a 13 by 9 inch baking pan.
Melt the chocolate and butter in a 2-quart bowl in the microwave on high for 3 minutes. Stir until the chocolate is completely melted. Add the eggs, sugar, and vanilla and mix well with a spatula. Add the flour and stir to combine. Spread the batter evenly in the prepared pan. Bake for 25 minutes.
While the brownies are baking, make the frosting. Melt the chocolate and butter in a medium bowl in the microwave on high for 3 minutes. Stir until the chocolate is completely melted. Add the egg substitute, vanilla, and sugar and stir with a spoon until smooth. Stir in the marshmallows; they will soften but not melt completely. Spread the frosting over the warm brownies. The frosting will set up when the brownies are completely cooled. When cool, cut into 1 1/2-inch squares and store in the refrigerator in a plastic container with a snap-on lid.

My favorite brownie by far. The marshmallows make the recipe in my opinion, love the gooeiness, and all the chocolate. Everytime I take these somewhere I get multiple requests for the recipe, and they are gone before everything else.

I'm a fan of Paula Deen, but I have to say these were the WORST brownies I've ever made. It took much longer to bake than stated on the recipe, the batter rose and then collapsed to a gooey mess. I'll go back to my Nestle Toll House recipe. Sorry Paula!

So great. And they weren't hard to make at all. I didn't really understand the need for marshmallows, but it ended up tasting awesome anyways. Highly suggest these.

This recipe looks very similar to one my mom used to make for special occasions. I've looked high & low around my house for it, but can't find it!! I remember it used an entire box of powdered sugar and a can of hershey's chocolate syrup. Your thoughts of the similarities and how the can syrup could make it into the frosting part of the recipe?? Thanks SO MUCH.... kk

Very rich and dense, didn't quite understand the need for the egg substitute - what is it supposed to do?

These were sooooo good. We had to give some of the brownies away because we found ourselves eating them as meals! It was actually a easy recipe to do and worth every minute of making it!

These are my husbands favorite brownies. I have never made the frosting because I never have egg substitute on hand but the brownies are good enough to serve by themselves. Extra yummy with a glass of milk. Hopefully I'll try it with the frosting at some point. -Amanda R. , Williamsburg, VA.
