Low Country Cookies

Low Country Cookies Low Country Cookies Recipe Courtesy of


Servings: 15 to 20 servings
Prep Time: 40 min
Difficulty: Easy

Ingredients Add to grocery list

1 cup chopped pecans
1/2 cup milk
1   egg
1 cup sugar
12 tablespoon (1 1/2 sticks) butter
1   16-ounce box graham crackers
1 cup or 3 (1/2-ounce) cans shredded coconut

Topping:
2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) butter
3 tablespoons milk

Directions

Line a 13 x 9-inch pan with whole graham crackers.  Melt butter in saucepan and add sugar.  Beat egg and milk together; add to butter mixture.  Bring to a boil, stirring constantly.  Remove from heat.  Add nuts, coconut, and 1 cup graham cracker crumbs.  Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.

Topping:

Beat all ingredients together and spread over top layer of crackers. Chill. Cut into squares.

There are great. Like eating graham crackers and milk. Do I keep them in the frig though or can I keep them on the counter in a tin.

I received this recipe from a family friend in florida. I worked at a nursing at the time in the kitcken and decided to make them for the residents. They were a big hit and had requests to make them quite often.
