Servings: 4 servings
Prep Time: 35 min
Cook Time: 1 hour 40 min
Difficulty: Easy

Ingredients Add to grocery list

1 1/2 lb ground chuck
1 lb ground Italian sausage
1   onion
2   cloves garlic, minced
2 teaspoon ground oregano
1 teaspoon ground basil
1/4 teaspoon salt
1/4 teaspoon pepper
1   (14.5-ounce) can diced tomatoes with basil, garlic and oregano
2   (15-ounce) cans tomato sauce
1   (6-ounce) can tomato paste
1 1/2 cup small curd cottage cheese
1   (5-ounce)package grated Parmigianno-Reggiano
2 tablespoon freshly chopped parsley leaves
2   large eggs, lightly beaten
9   oven ready lasagna noodles
2   (8-ounce) packages shredded mozzarella

Directions

Preheat oven to 350 degrees F.

In a large saucepan, combine ground chuck, sausage onion and garlic. Cook over medium heat until meat is browned and crumbled; drain.

Return meat to pan and add oregano, basil, salt and pepper. Add tomatoes, tomato sauce and paste. Bring to a boil, reduce heat and simmer 30 to 45 minutes.

In a small bowl, combine cottage cheese, Parmesan, parsley, and eggs.

Spoon 1/4 of sauce into bottom of a 13 by 9 by 2-inch baking pan. Place 3 uncooked lasagna noodles on top of sauce. Do not overlap noodles. Spread 1/3 of cottage cheese mixture over noodles, top with 1/4 of sauce and 1/3 mozzarella cheese. Repeat layers, ending with sauce, reserving 1/3 of mozzarella cheese.

Bake 45 minutes. Top with remaining cheese and bake 15 minutes or until hot and bubbly. Let rest 10 minutes before serving.

Really only serves 4 people? I'm sure the recipe serves more, but it makes me nervous because I'm serving 7 for a party. Since it's in a 9 X 13 dish, I think I'll be okay. Saw the comment about serving size. Miss you, Paula, on Food Network. Love your recipes!

I have made this dish four times in the last month and have received nothing but compliments. Last night I made it for a birthday party and was told it is the best lasagna that they have ever tasted. The only thing I altered on the recipe was replacing the cottage cheese with ricotta. Fantastic, easy recipe!

Is this really just for four servings? That seems like huge portions! I made this last night, and we're eating it as leftovers tonight. smile One of my sons dislikes melted cheese, so I only used about 1/2 of one package total. Will definitely be making this meal again, though - hearty and good!

This is by far the best lasagna I've ever had! You don't even notice the cottage cheese. I used to make it in college and it was a huge hit for my roommates and friends. Now I make it for my family as a special treat and a winter, comfort food staple!

I make this lasagna all the time. My husband is not a fan of cottage cheese so I just substitute slices of whole mozzarella. It is rich and delicious! Perfect balance.

I made this last night for dinner for the 1st time. WOW....it was so delicious!! Lasagna is my husbands favorite dish and I haven't made it in years. The old recipe I've always used was so time consuming but very tasty. Paula's Lots of Meat Lasagna was out of this world easy. I've never heard of oven ready lasagna noodles but I loved them!! You couldn't even tell a difference at all on taste from the regular ones that you boil. I'll be making Lasagna on a regular basis now. My husband will be so happy!! Thanks Paula!!! =)
