Recipe Courtesy of Paula DeenServings: 8 to 10 servings

1 pint heavy whipping cream
1/4 cup confectioners’ sugar
1 lb marscapone cheese, at room temperature
3 (3-ounce) packages unfilled ladyfingers
1 (6-ounce) can frozen limeade concentrate, thawed
1 (21-ounce) can blueberry pie filling
fresh mint leaves, optional
In a large bowl, beat cream with an electric mixer at medium speed until thickened. Gradually add confectioners’ sugar, beating until soft peaks form. Gently stir in cheese until combined; set aside.
Split ladyfingers in half. Line a 13 by 9 by 2-inch baking dish with ladyfingers, cut side up. Brush ladyfingers with limeade concentrate. Spoon half of cheese mixture over ladyfingers. Top with half of blueberry pie filling. Repeat procedure for the next layer with remaining ladyfingers, limeade, cheese mixture, and pie filling. Cover and chill 8 hours. Cut into squares to serve. Garnish with fresh mint, if desired.

I thought this sounded great, but it was only average. And it cost about $30 to make, as ladyfingers and marscapone are fairly pricey. The photo here looks like fresh blueberries, not pie filling. If I were to make this again, I would try a thin layer of pound cake instead of ladyfingers, increase confectioners sugar to 1/3 cup at least, add fresh blueberries or more filling. And I love the idea below to use cream cheese instead of marscapone. A good idea, could be better.

Years ago my mother used to make the most wonderful cake. It was called Dr. Bird Cake. It was like a pound cake and had crushed pineapple, bananas, and coconut and maybe nuts. But I haven't been able to find it anywhere, not even online. Do you have a similar recipe for pound cake that incorporates those flavors? I would appreciate it if you could find something. ok, i had to look all over for "lady fingers" all I could find is bisotti style, that says ladyfingers, i thought that was it, til i read cut them! theres no cutting those. What are they??? Also, I dont like canned fruit, so i made my own filler, with blackberries and raspberrys.

THIS RECEIPE WAS A SMASH AT MY THANKSGIVING DINNER..THE PRESENTATION WAS BEAUTIFUL AND THE FLAVOR WAS DELICIOS..MY ONLY PROBLEM WAS FINDING THE MARSCAPONE CHEESE..I FINALLY WENT TO THE BAKERY AND THEY HAD ME SOME SHIPPED IN JUST IN TIME FOR THE OVER NIGHT PREPERATION.
