Recipe Courtesy of Paula DeenServings: about 4 cups
Prep Time: 10 min
Cook Time: 30 min
Difficulty: Easy
1 10-ounce package frozen chopped spinach, cooked in the microwave on high for 5 minutes
2 13 3/4-ounce cans artichoke hearts, drained and chopped in a food processor
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated parmesan cheese
1 cup grated pepper jack cheese
Preheat the oven to 350.
Grease a casserole dish with a non-stick spray. Combine all of the ingredients but jack cheese in a large bowl. Stir well with a metal spoon. Sprinkle jack cheese on top. Place in the prepared casserole dish and bake for 30 minutes. Transfer to a chafing dish. Keep warm over a low flame. Serve with bagel chips.
