Difficulty: Easy
1 lb carrots, peeled, thinly sliced into coins
1/4 cup cilantro, roughly chopped
1 Tablespoons lemon juice
2 teaspoons honey
1/2 teaspoons lemon zest, grated
2 Tablespoons butter
Place carrots in a steamer basket over boiling water. Cover saucepan and steam 7-8 min or until carrots are tender. Transfer carrots to a bowl. Toss with remaining ingredients. Salt and pepper to taste.
Paula’s grandmother’s note: Omit the cilantro and lemon zest and place in a blender to puree for a great baby food!

Great recipe, but better leave the honey out if you're making baby food. I don't think it's recommended before age two, or something like that, due to pasturization issues.

I also like to use lemon in recipes when possible. I really like the zucchini chocolate chip bread recipe. I did add 3 tabl.of cocoa so my friends couldn't make out that it had zucchini in it. I have a fresh peach meringue pie recipe that I would love for you to try. Their is nothing better than a georgia peach & the peach meringue pie is to die for. I have a recipe for a drink that I have made for 40 yrs. It is frozen lemonade.fresh peaches,rum & crushed ice. good summer drink.

One word "yummy!" I cooked this for my family with "Paula’s Baked Ham and Cheese Chicken" and it was the perfect side dish. The pairing of lemon and honey is wonderful and it's so easy to make. My family loved the recipe so much that it beat out my own mothers carrot recipe.
