Honey and Goat Cheese Chicken Honey and Goat Cheese Chicken

Servings: 4 servings

Ingredients Add to grocery list

4 chicken breasts, boneless
1 sleeve butter crackers, crushed
1 teaspoon crushed red pepper
1 teaspoon salt
½ teaspoon black pepper
6 oz. goat cheese, cut into 4 equal portions
3 tablespoon honey
3 tablespoon butter, melted
Non-stick cooking spray





Preheat oven to 350º F.

Make a slit in the side of each chicken breast, being very careful not to go through the other side. In a medium bowl, add crushed crackers, red pepper, salt and pepper. Spray the bottom of a 9x13 baking dish with non-stick cooking spray. Stuff each chicken breast with equal amounts of goat cheese and place in baking dish. Press cracker mixture on top of each breast, coating evenly. Spray the top of each breast with non-stick cooking spray. In a small bowl, stir together butter and honey. Bake chicken breast for 10 minutes. Finally, spoon honey butter over chicken and return to oven for 25 minutes.

Notes from the Paula Deen Test Kitchen:  Great family night dinner. Make sure the knife you use to make the slits in the chicken breasts is very sharp.

The Best Ever. Changed it some. Added parsley to the bread crumbs the last ten minutes of cooking. Also, changed goat cheese, added oregano and Greek seasoning. EASY for a crowd.. Every one loves it.

THE BEST!!I added fresh parsley the last 10 minutes of cooking. Gives it a finished look with some color. To the goat cheese I added oregano and Greek season. Super easy great party dish.

Love, love, love this!!! My husband said this is the best chicken dish he's ever had- ANYWHERE. And that is saying a lot because we are big time foodies. I did use multi-grain crackers instead of butter crackers for the health and texture aspect. And I actually used fig goat cheese to make it even sweeter. If you love goat cheese, you will LOVE this dish.

Completely AMAZING chicken!! Sweet, spicy, and devine! There were no leftovers here. It was easy to make, bake, and enjoy. The Goat cheese gives it a smooth sweet flavor along side the honey and the red pepper gives just enough spice that anyone can enjoy. The chicken will be plump, juicy, and slightly crisp. Make sure you use large chicken breast for better results and don't substitute other cheeses...it won't be as incredible as it is with Goat cheese and do it exactly as the recipe calls, you won't regret it... anything else and you truly miss out on the flavors that are created the way Paula Dean created them to be. Simply Amazing!

omg, this is awesome. I accidentally picked up chicken tenders instead of breasts so instead of cutting pockets, I just put one tender on top of another with the cheese in between. It worked great! I will do this recipe again.

My family loves this. But I have two teenagers. So when they are here when I make it i do this. I use shredded sharp cheese instead of the goat cheese. They love it. But for my husband he loves the goat cheese. Also I add a little pitch of red pepper to the cheese. It gives it a little more of a kick. Anyway they love it. Thanks, Charity Pelham
