Ingredients Add to grocery list

18 ounce roll refrigerated sugar cookie dough, sliced 1/4-inch thin
14 ounce package chocolate mint wafers
1 tablespoon coarsely chopped walnuts or pecans, or enough to cover top of cookies
1   egg, beaten

Directions

Preheat oven to 375 degrees.

Slightly grease a cookie sheet. Place slices of sugar cookies on sheet, about 2-3 inches apart. Top each with a chocolate wafer. Cover wafer with another slice of cookie dough. Brush dough with a beaten egg. Press nuts into top of dough. Bake for about 10 minutes.

I used Girl Scout Thin Mint cookies as my flling and made them for a bake sale fund-raising event. After my "taste test" -- I expect them to be a big hit!

I made these a few days ago with my best friend and her daughter. We used hershy truffle kisses sliced thin and they were really good. They came out huge and oh so tasty.

My son loves anything mint so I made these for the first time today. They are already gone!!! I love how easy they are to make. This is one I will make every Christmes and year round. Thank you Paula!!!

my family loves these cookies! I go a step further..I dip half of each cookie in melted chocolate then in crushed nuts. They are large very attractive cookies and sooooo easy. Everyone always wants the recipee! we like to enjoy them with a cup of warm cocoa.Thanks Paula, this is a dynamite recipee for a busy mom like me.
