Healthier Mac and Cheese

Healthier Mac and Cheese Healthier Mac and Cheese Recipe Courtesy of

Difficulty: Easy

Ingredients Add to grocery list

2 cups whole wheat or regular elbow macaroni (8 ounces)
2 cups shredded reduced-fat Cheddar cheese (8 ounces)
½ cup low-fat evaporated milk
2 large eggs, lightly beaten
¼ cup reduced-fat sour cream
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon cayenne pepper
1/3 cup grated Parmesan cheese





Preheat the oven to 350°F. Coat a 13x9 inch baking dish with cooking spray.

In a large pot of boiling salted water, cook the macaroni according to the package directions. Drain well and transfer the pasta to a large bowl. Add the Cheddar and stir until the pasta is coated and the cheese has melted.

In a medium bowl, whisk together the evaporated milk, eggs, sour cream, mustard, salt and cayenne pepper.  Add the milk-egg mixture to the macaroni and cheese and stir well to combine. Scrape the mixture into the prepared baking dish and sprinkle the Parmesan evenly over the top. Bake until golden brown and crispy around the edges, 35 to 40 minutes.

Hi Paula, I'm sure you are very bizzy and don't have time to read all the emails being sent. I just thought I should send this even if you never read it. Myself and my family have been and still are BIG FANS. I just want to let you know that no one is perfect. I will be boycotting anyone who stops carrying your products. I up in till yesterday Shopped with QVC on a daily baices but not any more. I heard this morning walmart and target are no loger carring your products this is an outrage.Why are they sill carrying rapp musice Suce as snoop dog, 2 pac, I could go on and on. Stay strong and keep loving friends and family close. I will be praying for you and your familey. Much Love and respect. I subbed in fat free Greek yogurt or the sour cream. I also thru in a bag of fresh spinach in with pasta about 30 seconds before draining it off. Awesome! You don't miss the our cream at all!

Is it possible to include nutritional info? As a diabetic, I am trying to keep track of my carbs, due to other medical issues I also need to watch fat, cholesterol and protien, so nutritional info would be very helpful.
