Recipe Courtesy of Paula DeenServings: 6 to 8 servings

Difficulty: Easy
3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper
Preheat oven to 450 degrees F.
Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.
Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.
Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

made 4 of your quiche recipe for my prayer group this evening, it was a big hit. I recently learned that I am allergic to gluten, I can use the potato crust. wish you would come up with a good gluten free biscuit and pie crust recipe. I watch your shows daily if I am at home. love that you are always so jolly. sure there are times that you don't feel that good, but you always inspire me love to hear you laugh. . I made this using Southwest style frozen hashbrowns - onion, red and green peppers were mixed in with the potatoes, and it added a nice kick in spice. Also used turkey bacon in place of ham - excellent. Will use 1 extra egg in the future, but is definitely delicious and flavorful.

Just made your fabulous quiche. Sort of meshed the two recipes together, yours and the boys. I saute the mushrooms and onion in olive oil, which I added to the egg mixture. I used half the butter on the potatoes and baked the them prior to adding the egg mixture and then baked. My family loved it! Thank you Paula and the boys too.

do you know how to make a meat pie [french]grown pork and mashed potatoes ,my grand mother was from, canada,and she did a great pork pie,it had cloves in it, too.i couldn't get it right,thanks for cooking all them great meals its like having my grandmom, back,she wasnt that good of a cook as you are,but there were things she did that we remember as great like her whoppy pies.

Love this! Every time I make it everyone says they love it too. Sometimes I add an extra egg so it will go a little further. Also, I usually don't have ham so I use venison summer sausage instead.

Yummy! This was good! I used fresh shredded hash browns because I couldn't find them frozen. When I spread this into my pie plate I thought for sure everything was not going to fit, but it did. Next time I'm going to bake the hash browns a little longer at the beginning. I baked them 25 minutes and the top edges got really crispy, but the rest stayed a little mushy. I'll probably used some foil to protect the edges and brown the rest a little longer. I'd also bake the entire thing a little longer too. For me 30 minutes just wasn't long enough. The center was still watery and runny. I threw it into the microwave for another 5 minutes and it was fine. Definitely a keeper. This could easily be adapted to any other filling items. I'd love to try swiss instead of cheddar. Or maybe some bacon or sausage. Hmm... now I'm getting hungry again!
