Recipe Courtesy of Paula DeenThis is a great way to use any leftover ham from Easter!
Difficulty: Easy
2 cups leftover ham, chopped in a food processor
1 cup finely diced celery
1/4 cup finely minced sweet onion
1 teaspoon Dijon mustard
2 hard-boiled eggs, diced
1/4 cup hot pickle relish, drained
1/2 cup mayonnaise
Mix all ingredients until well blended. Serve on crackers or bread as a sandwich.

I just tried this Ham Salad and I have to say it is the best I have ever made. I did'nt have the celery so I used celery seeds and it is still good. The next time I will use the celery. Thanks Paula

Excellent recipe... I started with it as written, but have started experimenting (dill relish instead of hot or sweet, a hint of horseradish, and some fresh ground black pepper). Thanks Paula!

My only experience with ham salad was for lunch in elementary school. My husband tried this recipe, and I was not sure whether I wanted to try it, but was pleasantly surprised...much better than the cafeteria lady's recipe!
