salt and freshly ground black pepper
2 tablespoon key lime juice
5 tablespoon unsalted butter
4 (6-ounce) salmon filets
cooked pasta or rice
Prepare grill by lightly oiling grill grate over medium-high heat.
In a small saucepan, melt butter add lime juice. Salt and pepper the salmon fillets modestly on both sides. Place fillets onto grill, brush half of lime butter over salmon. Grill salmon for 2 to 3 minutes per side for medium-rare. Drizzle remaining lime butter over salmon before serving. Serve with pasta or rice.

Saw this today on food network and went out and bought salmon, limes (regular, not key limes), put it together, along with sesame asparagus, and lemon pasta. I am not a fish person, generally, but when I cooked the salmon on the charcoal grill...well, let's just say I was very popular with the fam! Also, i seasoned the salmon before cooking with your special seasoned salt and pepper mixtures as well as the lime and butter mixture. Yum!

This yummy recipe was quick and easy. The salmon was so light! I didn't have Key Lime Juice so I substituted Lemon Juice and some lemon zest. Also substituted "I Can't Believe It's Not Butter" for the butter. This was so good... I can only imagine how much better it would be if I didn't live so far away from the store and could have used real butter and Key Lime. Thanks Paula for another delicious meal!
